What the Hell is the Difference Between Cacao & Cocoa Powder?

Other than a switching around of letters, a lot of people commonly ask “What is the real difference between cacao & cocoa powder?”
The both look the same.
They both smell the same.
They both taste the same.
Unfortunately, most people mistakenly believe they are the exact same; however, they are most definitely not.
So, what the hell is different, then? The way that they are processed, of course!
Here are the two different powders: Raw cacao powder (left) and Dutch-processed (alkalized) cocoa powder (right). Raw cacao is made by cold pressing unroasted coffee beans while cocoa powder is made by roasting the beans at high temps. Notice how the cocoa powder is a lot darker than the raw cocoa powder? That is your clue. Also, when processing raw cacao, the enzymes are left in while the cacao butter (fat) is removed. However, when cocoa powder is made by roasting at high levels of heat, the enzymes are ruined and you are left with less nutrients in your powder. This is why raw cacao powder is a whole lot better for you.
